Stuffed Peppers & Chicken

4 bell peppers (any color), tops cut off and seeds removed
1 lb chicken breast cut into bite sized pieces
2 cups riced cauliflower or white rice
1/2 cup bell peppers diced
2 cups shredded cheese
2 tbsp of tomato paste
1 tsp better than bouillon
Salt and pepper to taste
Directions
1. In a skillet, heat olive oil over medium heat. Add chicken pieces and cook until browned. Season to taste. Add diced bell peppers and cook until soft.
2. Stir in riced cauliflower, better than bouillon and tomato paste. Cook until well mixed and set aside.
3. Add bell peppers and water to a microwave safe bowl. Steam bell peppers in microwave for about five minutes or until bell peppers are slightly soft. Remove from water, and stuff each bell pepper with the chicken-cauliflower mixture.
4. Place stuffed peppers in a baking dish, sprinkle cheese on top. Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 5 minutes to melt cheese. Serve hot and enjoy!
