Potato Broccoli Cheddar Soup

Ingredients

2 tablespoons butter

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

2 pounds potatoes, peeled and cubed

1 head broccoli, cut into florets

 4 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

Salt and pepper to taste

Instructions

Melt butter in a large Dutch Oven Pot over medium heat. Add onion and garlic to pot and cook until softened. Add potatoes and chicken broth. Bring to a boil, reduce heat and simmer for 15-20 minutes, or until potatoes are tender. Add broccoli florets to the pot and cook until tender. Use blender to slightly blend soup for a smoother texture. Stir in heavy cream and cheddar cheese until melted and smooth. Season to taste. Simmer for a few minutes to combine flavors. Top with crispy bacon bits for additional flavor. Enjoy!
