Ingredients
2 cups cooked white rice
1 lb ribeye steak
1 onion yellow
3 spring onions
1 tbsp garlic minced
2 tbsp soy sauce
3 tbsps oyster sauce
1/2 cup Soy sauce, to fry rice
2 eggs
1 tsp Sesame oil
1 tsp brown sugar
1 tbsp olive oil
1 tbsp corn starch
salt and pepper to taste
drizzle more soy sauce as needed
Instructions:
1. In a bowl, combine soy sauce, oyster sauce, brown sugar, cornstarch, baking soda, and garlic. Add the sliced steak to the marinade and mix well to coat. Let it marinate for at least 20-30 minutes (or up to 1 hour for more flavor).
2. Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add the marinated steak and cook for 2-3 minutes until browned and cooked through. Remove from the pan and set aside.
3. In the same pan, add the remaining oil. Add the diced onions and cook until softened. Add the cooked rice, soy sauce and sesame oil breaking up any clumps with a spatula. Stir-fry for 2-3 minutes until the rice is heated and coated thoroughly and slightly crispy.
5. Push rice to one side of the pan. Pour in the beaten eggs on the empty side, scramble until cooked, and then mix into the rice.
6. Add cooked steak back to the pan. Stir everything together and add additional soy sauce if needed for seasoning.
7. Sprinkle with chopped green onions and give it a final stir. Serve hot!
