1 onion, chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

6 cups water or chicken broth

Salt and pepper, to taste

 Instructions

1. Rinse split peas under cold water and set aside.

2. In a large pan, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

3. Stir in the minced garlic. Cook for another minute until fragrant.

4. Add rinsed split peas, water, ham and veggies to the pot. Bring to a boil.

5. Once boiling, reduce heat to low, cover, and let it simmer for about 1 to 1.5 hours, or until the split peas are tender. Stir occasionally and add more broth or water if the soup becomes too thick.
