Seafood Alfredo Rollups

6 lasagna noodles
1/2 lb shrimp, peeled and deveined
1 cup shredded mozzarella cheese
1 cup shredded blended cheese
2 tablespoons fresh parsley, chopped
Salt and pepper to taste
Ingredients For Alfredo Sauce:
2 tablespoons olive oil
1/2 yellow onion diced
2 clove garlic, minced
2 cups grated Parmesan cheese
1 can rotel
2 cups heavy cream
2 cups grated Parmesan cheese
8 oz Spinach
8 oz Mushrooms
8 oz Crabmeat
Salt and pepper to taste
Directions
1. Bring a large pot of salted water to a boil. Cook lasagna noodles according to package instructions. Drain and set aside.
2. In a large skillet heat olive oil over medium heat add shrimp and cook for 2-3 minutes on each side or until shrimp turns pink and opaque. Season to taste, cut into pieces and set aside.
3. Add olive oil over medium heat and cook diced onions for 1-2 minutes until fragrant. Add garlic, rotel, heavy cream, and parmesan cheese. Whisk parm cheese until sauce becomes smooth and creamy. Next cook spinach and mushrooms until wilted and tender. Add crabmeat and simmer 3-4 minutes or until fully cooked. Season to taste.
4. Preheat oven to 350°F (175°C). Lay each lasagna noodle flat on a clean surface. Spread 2-3 tablespoons of seafood alfredo sauce evenly over each noodle. Add pieces of shrimp and a layer of mixed shredded cheese. Carefully roll each noodle and place over a thin layer of Alfredo sauce in a baking dish. Top with more seafood Alfredo sauce. Add a layer of mixed shredded cheese, and a layer of shredded mozzarella cheese.
5. Cover with foil and bake for 20-30 minutes or until rollups are heated through and bubbly. Remove foil for the last 5-10 minutes to allow cheese to become golden. Remove from heat. Enjoy!
