Turkey & Shrimp Quesadillas

Ingredients

 1/2 lb ground turkey

1/2 lb shrimp, peeled, 

1 tbsp olive oil

1/2 onion, finely chopped

1/2 red bell pepper, finely chopped

1/2 green bell pepper, finely chopped

1 tsp garlic powder

1 tsp onion powder

1 tsp chili powder

1/2 tsp cumin

1 tsp smoked paprika 

1 tsp season salt (season to taste)

1 cup shredded Mexican cheese blend

4 large flour tortillas

2 tbsp olive oil, for cooking

Optional: salsa, sour cream, guacamole, or chopped cilantro for serving

 

Directions

 1. In a skillet over medium heat, add olive oil and sauté onions and bell peppers until soft. Add ground turkey and cook until browned and fully cooked. Season with onion powder, garlic powder, chili powder, cumin, seasoning salt, and pepper. Remove from skillet and set aside.

2. Drizzle olive oil to medium skillet, add shrimp to skillet and cook for 2-3 minutes until shrimp are pink and cooked through. Mix shrimp to ground turkey mix everything well and set aside.

3. Next drizzle pan with olive oil, lay tortilla flat and sprinkle a good amount of cheese. Add ground turkey and shrimp mixture over cheese and fold the tortilla in half.  Cook quesadillas over medium heat evenly on both sides, until each side is golden brown, and cheese is melted. Cut into wedges and serve with salsa, sour cream, guacamole, or your favorite toppings. Enjoy
