Cheesy Chicken Wrap

This cheesy chicken wrap recipe, will soon become your go to when it comes to delicious wrap recipes. They are warm, flavorful, and perfectly melty. The blend of cheese and juicy chicken is simply irresistible. 

Ingredients

2 cups cooked chicken thighs, diced

1 cup bell peppers (any color), sliced

1 small red onion, sliced

1 cup shredded cheese (cheddar, mozzarella, or your choice)

1 cup lettuce, chopped

1 cup tomatoes, diced

4 large garden spinach and herb wraps

2 tablespoons olive oil

Salt and pepper to taste

 

Ingredients for ranch sauce 

1 cup mayonnaise

1/2 cup greek yogurt

1 tablespoon fresh lemon juice (or vinegar)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: a splash of buttermilk for a thinner consistency

 

Directions for ranch sauce

1. In a bowl, combine mayonnaise, sour cream, and lemon juice.

2. Stir in garlic powder, onion powder, dill, salt, and black pepper. Mix until well combined.

3. If you prefer a thinner sauce, add a splash of buttermilk and mix until you reach your desired consistency.

 

Directions for cheesy wrap

 1. In a skillet, heat olive oil over medium heat. Add sliced bell peppers and onions. Sauté until tender.  Season to taste and set aside.

2. In the same skillet drizzle olive oil over medium heat and sear chicken thighs on both sides until fully cooked or until tempter of chicken reaches 165 F.  Cut chicken into bite sized pieces and set aside.

3. Lay tortillas on a flat surface. In the center of tortilla add diced chicken, onions and peppers, mozzarella cheese, lettuce and tomatoes, and a drizzle of ranch sauce.

4. Fold in both sides of tortilla, then roll up from top to bottom, securing the filling inside.

5. Heat olive oil over medium heat. Place rolled tortilla seam-side down in skillet. Grill for about 2-3 minutes on each side, or until tortilla is golden brown and the cheese is melted. Cut in half, serve hot and enjoy.
