Cauliflower Fried Rice

Ingredients

1.5-2 cups of store-bought cauliflower rice

2 tablespoons olive  oil

1 small onion, diced

1 cup frozen peas and carrots

2 large eggs, lightly beaten

3 tablespoons soy sauce

2 tablespoons sesame oil

Season to taste

Optional: cooked chicken, shrimp

 

Directions

1. In a skillet, heat olive oil over medium heat. Add seasoned chicken breast and cook until browned and fully cooked. Slice into bite sized pieces and set aside. Next sauté shrimp for 2-3 mins on both sides. Remove from heat and set aside.

2 In the same skillet drizzle olive oil over medium heat, add onions, cauliflower, eggs, peas and carrots, soy sauce, and sesame oil.

3. Toss until cauliflower turns brown. Season to taste. Add shrimp and chicken. Remove from heat, drizzle homemade yum yum sauce over rice. Serve hot and enjoy!
